Would it be possible to visualise the weekly report as a stacked bar chart (like in this screenshot), so we can easily see what the division of our day looked like by project. And ideally, we would also be able to see a total number of hours (as well as % time spent) on each project for the week.

Have you tried using the beta version of Reports? You can enable the beta program at the bottom of the Profile page via the web app: Toggl Track
With the beta, you can create a report for the week with a stacked bar chart and choose what kind of stacking you prefer:
